Ingredients
For the Beef Sausages & Peppers:
- 4 large beef sausages
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped (for garnish)
For the Creamy Mashed Potatoes:
- 4 large potatoes, peeled and cut into chunks
- 4 tablespoons butter
- 1/2 cup milk or heavy cream
- Salt and black pepper, to taste
Instructions
1. Cook the Peppers and Onions
Heat the olive oil in a large skillet over medium heat. Add the sliced peppers and onions, then season with garlic powder, salt, and black pepper. Cook for about 8–10 minutes, stirring occasionally, until the vegetables become soft and lightly caramelized. Transfer to a plate and keep warm.
2. Prepare the Beef Sausages
Grill or pan-sear the beef sausages over medium heat, turning occasionally, until nicely browned and fully cooked, about 10–15 minutes.
Return the peppers and onions to the skillet and toss them with the sausages for a few minutes so all the flavors blend together beautifully.
3. Make the Mashed Potatoes
Place the potatoes in a large pot and cover with cold salted water. Bring to a boil and cook for 15–20 minutes, or until fork-tender.
Drain the potatoes and mash until smooth. Stir in the butter and milk, mixing until creamy and fluffy. Season with salt and pepper to taste.
To Serve
Spoon the creamy mashed potatoes onto a plate and serve alongside the grilled beef sausages and colorful peppers. Finish with a sprinkle of fresh parsley for extra freshness and color.
