Bake Time: 30 minutes
Ingredients
For the Cake
1 box Duncan Hines white cake mix
Ingredients needed to prepare the cake mix (usually eggs, water, and oil)
For the Filling
1 box strawberry gelatin (Jell-O)
1 box berry blue gelatin (Jell-O)
2 cups boiling water (1 cup for each gelatin flavor)
For the Topping
1 tub Cool Whip whipped topping
Fresh strawberries, sliced (optional)
Fresh blueberries (optional)
White chocolate shavings or sprinkles (optional)
Instructions

  1. Bake the Cake
Preheat your oven according to the instructions on the cake mix box. Prepare the white cake batter as directed, then pour it into a greased baking dish. Bake until golden and fully cooked. Allow the cake to cool for about 15 minutes.
  2. Make the Holes
Using the handle of a wooden spoon or a straw, poke holes all over the cake, making sure they are evenly spaced. This step is what gives poke cake its signature look and flavor-packed texture.
  3. Prepare the Gelatin
In two separate bowls, dissolve the strawberry gelatin in 1 cup of boiling water and the berry blue gelatin in another cup of boiling water. Stir well until completely dissolved.
  4. Add the Colors
Carefully pour the red gelatin into some of the holes and the blue gelatin into the others, alternating for a colorful effect. Let the liquid soak into the cake.
  5. Chill the Cake
Place the cake in the refrigerator for at least 4 hours, or overnight for the best flavor. This allows the gelatin to fully set inside the cake.
  6. Add the Creamy Layer
Spread the Cool Whip evenly over the entire top of the cake, creating a smooth, fluffy layer.
  7. Decorate the Top
For an extra festive touch, decorate with fresh strawberries, blueberries, and white chocolate curls or sprinkles.
  8. Slice & Serve
Cut into squares and enjoy the colorful surprise inside every slice!
This Red, White & Blue Poke Cake is light, fruity, creamy, and bursting with fun colors. It’s the kind of dessert that makes everyone smile before they even take the first bite! Perfect for celebrations and easy enough for anyone to make. ✨🍰
