- 12 corn tortillas

- 2 cups shredded cheddar and Monterey Jack cheese blend
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- Salt and freshly ground black pepper, to taste
- 2 fried eggs (optional, for serving)
Instructions:
1. Prepare the Filling
Preheat your oven to 375°F (190°C).
Heat olive oil in a skillet over medium heat. Add the onion and garlic and cook until fragrant and softened. Stir in the ground beef, season with salt and pepper, and cook until nicely browned. Pour in about ½ cup of the red chile sauce and simmer for a few minutes.
2. Soften the Tortillas
Warm the corn tortillas in a dry skillet for a few seconds on each side until soft and pliable.
3. Build the Layers
Spread a thin layer of red chile sauce in the bottom of a baking dish. Place one tortilla on top, then add some of the beef mixture, a handful of cheese, and another spoonful of sauce.
Continue layering the ingredients until all tortillas have been used, finishing with a generous layer of sauce and cheese on top.
4. Bake
Bake for about 15 minutes, or until the cheese is melted, bubbly, and lightly golden.
