Ingredients
For the Butter Cake
3 cups all-purpose flour
1Β½ tablespoons baking powder
1 teaspoon salt
2 cups unsalted butter, softened
1ΒΎ cups granulated sugar
ΒΌ cup vegetable oil
6 large eggs, room temperature
1Β½ tablespoons vanilla extract
1 cup whole milk, room temperature
For the Pineapple Jam
Β½ fresh pineapple, finely diced
Β½ cup granulated sugar
Juice of 1 lemon
1 tablespoon cornstarch
2 tablespoons water
A pinch of salt
Method
Step 1: Prepare the Cake Batter
Preheat your oven to 175Β°C (350Β°F) and grease two 9-inch round cake pans, then dust them lightly with flour.
In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
In a large mixing bowl, beat the softened butter, sugar, and vegetable oil together for about 4β5 minutes until the mixture becomes pale, creamy, and fluffy.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients in three parts, alternating with the milk. Start and finish with the flour mixture, mixing gently after each addition until everything is just combined. Avoid overmixing to keep the cake soft.
Divide the batter evenly between the prepared pans and smooth the tops.
Bake for 45β50 minutes, or until a toothpick inserted in the center comes out clean.
Remove from the oven and let the cakes cool in the pans for 10 minutes before transferring them to a wire rack. Once slightly warm, wrap each cake layer in plastic wrap to lock in moisture.
Step 2: Make the Pineapple Jam
In a saucepan over medium heat, combine the diced pineapple, sugar, lemon juice, and salt.
Cook while stirring frequently until the pineapple softens and the mixture starts bubbling.
In a small bowl, mix the cornstarch with water until smooth, then pour it into the pineapple mixture.
Continue cooking for 5β8 minutes, stirring constantly, until the jam thickens into a rich, glossy texture.
Remove from heat and allow it to cool completely.
Step 3: Assemble the Cake
Place one cake layer onto a serving plate or cake stand.
Spread the cooled pineapple jam evenly over the top.
Carefully place the second cake layer on top.
For a classic bakery-style finish, you can leave it plain or frost it with a light buttercream for extra sweetness.
Serving Suggestion
