These creamy shrimp and spinach pasta rolls are the perfect combination of comfort and elegance. Tender lasagna sheets are filled with a rich mixture of juicy shrimp, fresh spinach, and creamy cheeses, then topped with a smooth roasted red pepper sauce that adds a slightly sweet and smoky flavor. It’s the kind of meal that feels fancy but is surprisingly easy to make at home.

Ingredients

For the Pasta Rolls:

  • 8 lasagna noodles, cooked until just tender
  • 1 pound shrimp, peeled and cleaned
  • 2 cups fresh spinach, finely chopped
  • 1 cup ricotta cheese
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • 2 garlic cloves, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and black pepper, as needed

For the Roasted Red Pepper Sauce:

  • 2 roasted red peppers, peeled and seeded
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste

Directions

1. Get the Dish Ready
Preheat your oven to 375°F (190°C). Grease a baking dish lightly with oil or butter and set aside. Place the cooked lasagna noodles on a flat surface so they’re ready to be filled.

2. Make the Filling
In a large bowl, mix together the shrimp, spinach, ricotta, mozzarella, Parmesan, garlic, basil, oregano, salt, and pepper. Stir until everything is well blended and evenly coated.

3. Assemble the Rolls
Spread the filling evenly over each lasagna sheet. Roll them up carefully, making sure the filling stays inside, and arrange them seam-side down in the baking dish.

4. Prepare the Sauce
In a blender or food processor, combine the roasted red peppers, heavy cream, Parmesan, garlic, olive oil, salt, and pepper. Blend until smooth and creamy. Pour the sauce generously over the pasta rolls.

5. Bake and Serve
Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for another 10 minutes until the sauce is bubbling and the rolls are heated through. Serve warm and enjoy every creamy, cheesy bite.
