Garlic Herb Roasted Salmon with Asparagus & Baby Potatoes
This simple and flavorful one-pan meal combines tender salmon, crispy roasted potatoes, and fresh asparagus for a healthy and satisfying dinner. Infused with garlic and aromatic herbs, it’s easy to prepare and perfect for busy weeknights or a wholesome family meal.
Ingredients
- 4 salmon fillets
- 1 pound baby potatoes, cut in half
- 1 bunch fresh asparagus, trimmed
- 3 garlic cloves, finely minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme or your favorite mixed herbs
- Salt and black pepper, to taste
- Lemon wedges for serving (optional)
Instructions
1. Roast the Potatoes
Preheat your oven to 400°F (200°C).
In a bowl, toss the baby potatoes with half of the olive oil, minced garlic, dried herbs, salt, and pepper. Spread them evenly on a baking tray and roast for 20 minutes until they start to soften.
2. Add the Salmon and Asparagus
Remove the tray from the oven and place the salmon fillets alongside the potatoes. Add the trimmed asparagus to the pan. Drizzle the remaining olive oil over the salmon and season everything with a little more salt and pepper.
3. Bake Until Perfect
Return the tray to the oven and roast for another 12 to 15 minutes, or until the salmon is flaky and fully cooked while the asparagus is tender.
4. Serve
Transfer to plates and serve warm with fresh lemon wedges for an extra burst of flavor.
Cooking Tip
For extra crispiness, broil the salmon for the last 2 minutes of cooking. You can also swap asparagus for green beans or broccoli if preferred.
