Ingredients:

  • 250g unsalted butter, softened
  • 150g (¾ cup) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 315g (2½ cups) all-purpose flour
  • 100g (1 cup) desiccated coconut
  • 1 teaspoon baking powder
  • ¼ teaspoon salt

Method:

  1. Set your oven to 175°C (350°F) and prepare a baking tray with parchment paper.
  2. In a large mixing bowl, beat the softened butter together with the sugar until the mixture becomes smooth, pale, and fluffy.
  3. Crack in the egg and pour in the vanilla extract, then continue mixing until everything is fully blended.
  4. In a separate bowl, combine the flour, desiccated coconut, baking powder, and salt, stirring well to evenly distribute the ingredients.
  5. Slowly fold the dry mixture into the butter mixture, mixing until you get a soft and workable cookie dough.
  6. Take small spoonfuls of dough, shape them into balls, and place them on the prepared tray. Press them down lightly with your hand or the back of a spoon.
  7. Bake for 12 to 15 minutes, until the cookies turn lightly golden around the edges.
  8. Leave them to rest on the tray for about 5 minutes, then transfer to a cooling rack and let them cool completely before serving.
