Ingredients:
- 250g unsalted butter, softened
- 150g (¾ cup) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 315g (2½ cups) all-purpose flour
- 100g (1 cup) desiccated coconut
- 1 teaspoon baking powder
- ¼ teaspoon salt
Method:
- Set your oven to 175°C (350°F) and prepare a baking tray with parchment paper.
- In a large mixing bowl, beat the softened butter together with the sugar until the mixture becomes smooth, pale, and fluffy.
- Crack in the egg and pour in the vanilla extract, then continue mixing until everything is fully blended.
- In a separate bowl, combine the flour, desiccated coconut, baking powder, and salt, stirring well to evenly distribute the ingredients.
- Slowly fold the dry mixture into the butter mixture, mixing until you get a soft and workable cookie dough.
- Take small spoonfuls of dough, shape them into balls, and place them on the prepared tray. Press them down lightly with your hand or the back of a spoon.
- Bake for 12 to 15 minutes, until the cookies turn lightly golden around the edges.
- Leave them to rest on the tray for about 5 minutes, then transfer to a cooling rack and let them cool completely before serving.
