With fresh carrots blended right into the batter, it comes out moist and fluffy every time — perfect for breakfast, dessert, or a sweet snack.IngredientsFor the batter:- 3 large eggs- 1½ cups (300g) granulated sugar- 1 cup (240ml) vegetable oil- 2 teaspoons vanilla extract- 2½ cups (300g) chopped carrotsDry mix:- 2 cups (250g) all-purpose flour- 2 teaspoons baking powder- ½ teaspoon baking soda- 1½ teaspoons ground cinnamon- ½ teaspoon saltOptional:- ½ cup (60g) chopped walnuts or pecansInstructions1. Preheat the oven to 175°C (350°F). Grease and line an 8-inch (20cm) cake pan with parchment paper.2. Place the eggs, sugar, oil, vanilla, and chopped carrots into a blender. Blend for 2 to 3 minutes until the mixture is completely smooth.3. In a separate bowl, combine the flour, baking powder, baking soda, cinnamon, and salt. Mix well.4. Pour the blended carrot mixture into the bowl with the dry ingredients. Gently fold everything together until just combined. If using nuts, fold them in at this stage.5. Transfer the batter into the prepared cake pan and spread the top evenly.6. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.7.
