🍌 Soft, Moist & Full of Banana Flavor
This simple blender banana cake is quick to make and comes out soft, fluffy, and naturally sweet. A perfect homemade treat for breakfast, snack time, or dessert.
Ingredients
For the cake:
- 3 ripe bananas
- 3 large eggs
- 120ml vegetable oil
- 200g granulated sugar
- 1 teaspoon vanilla extract
- 240g all-purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 1 teaspoon ground cinnamon (optional)
Optional toppings:
- Fresh banana slices
- Chopped walnuts
- Powdered sugar
Instructions
- Preheat your oven to 180°C (350°F) and prepare a loaf pan or round cake pan by greasing it and lining it with baking paper.
- Add the bananas, eggs, oil, sugar, and vanilla extract into a blender. Blend for 1–2 minutes until the mixture becomes smooth and creamy.
- Pour the blended mixture into a large bowl. Add the flour, baking powder, salt, and cinnamon, then gently fold everything together until just combined. Avoid overmixing to keep the cake light and soft.
- Transfer the batter into the prepared pan and spread it evenly.
- Bake for 35–45 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake rest in the pan for 10 minutes, then move it to a wire rack and allow it to cool completely.
- Finish with a light dusting of powdered sugar or top with banana slices and chopped walnuts before serving.
Helpful tips:
- The riper the bananas, the sweeter and richer the flavor will be.
- Mix gently after adding the flour for a fluffy texture.
- Keep the cake in an airtight container for up to 3 days at room temperature or 1 week in the fridge.
